Chef and Owner Steve Howells knew one thing for sure, that he was not cut out for the 9 to 5 office job sitting in front of a computer. Starting as a dishwasher in a pizzeria, he worked his way through all the stations. It was then he decided he loved the adrenaline rush of being in a kitchen and decided to go to the Restaurant School at Walnut Hill College, graduating in 2001. After graduation Steve bounced around Philadelphia learning how to work in professional kitchens. Just by chance Steve had an opportunity to move to San Francisco, so that’s exactly what he did. He quickly landed a job at a Michelin Starred restaurant, Cortez in Union Square, where he worked for one year. After San Francisco Steve came back to Philadelphia for a short while where he worked at Pasion Restaurant, a 4 bell modern Spanish Restaurant. As quickly as he came back, Chef Howells got a call to move to Los Angeles to become Sous Chef at one of L.A. Best restaurants, Hatfield’s. Within a week he was gone. Husband and wife, Quinn and Karen Hatfield took Steve in, mentoring him, showing Steve what it takes to be a chef. Hatfield’s had also earned one Michelin star. Chef Howells spent a year and a half working with Quinn and Karen at Hatfield’s in Los Angeles. Again Steve returned to Philadelphia where he accepted a job as a cook at Blackfish in Conshohocken. Steve was quickly promoted to Sous Chef, then Chef de Cuisine, then Chef of Blackfish. While running Blackfish Steve was an integral part of the restaurant when Blackfish won best restaurant in Philadelphia in 2011 in Philadelphia Magazines top 50 Restaurants issue. Chef Howells was also re-reviewed at Blackfish where he earned a 3 bell review, and was quoted as saying “Blackfish is better than ever”. Chef Howells and his team at Louette’s Byo are very excited to be in Phoenixville, and hope to become a local favorite, as well as a destination restaurant. Chef Howells and his family currently reside in Roxborough with his family and their two dogs.
